Cream Puffs
 

Ingredients:

1/2 cup butter
1 cup water
1 cup flour
4 eggs, unbeaten

Procedure:

Heat the butter and water.

When the mixture is boiling, add the all the flour at once.

Stir vigorously until the mixture no longer sticks to the sides of the pan.

Remove the mixture from the heat and cool slightly.

Add the eggs, one at a time, beating the mixture after each addition.

Drop the mixture by heaping teaspoons about 2" apart on a well-greased cookie sheet.

Bake in a very hot oven (450 degrees) for 20 minutes.

Reduce heat to 325 degrees and bake for 20 minutes more.

Remove from baking sheet and cool.

When ready to serve, cut open on one side and fill with whipped cream or other filling.
