Cabbage Recipe (Holishkes)

large cabbage leaves |

large yellow onion, diced |

pound ground beef |

cup lemon juice |

matzo, broken or 1/2 cup bread crumbs |
1/2
cup sugar |

cup water |

egg, beaten |

can tomato sauce |

|
|
|
Remove
leaves from large head of cabbage carefully. |
|
|
Place
the leaves in a large pot. |
|
|
Cover
the leaves with boiling water and simmer for 5 minutes.
Then, Drain. |

|
|
|
|
Soak
broken matzo or bread crumbs in 1/2 cup water until soft. |
|
|
Combine
this mixture with the ground beef and egg. |
|
|
Place
a heaping tablespoon of this in the center of each cabbage
leaf. |
|
|
Fold
in the sides of each leaf to cover the meat and then roll
them. |
|
|
Place
the cabbage rolls in a large saucepan with the 'open' side
down. |
|
|
Combine
remaining ingredients and pour over cabbage rolls. |
|
|
Bring
to a boil and then reduce heat. |

1 1/2 hours, basting occassionally. |
