3 slightly beaten
eggs
2 cups milk
1 1/2 cups cooked rice
1/2 cup sugar
1/2 cup raisins
1 teaspoon vanilla
Ground cinnamon
In bowl, combine eggs, milk, rice, sugar, raisins,
vanilla and 1/2 teaspoon salt; mix well. Bake
in 10x6x2 inch baking dish at 325 degrees for
25 minutes. Stir; Sprinkle with cinnamon. Continue
baking till knife inserted halfway between center
and edge comes out clean. (20 to 25 minutes
longer). Serve warm or chilled with light cream,
if desired. This recipe makes Rice Pudding for
6.
